Seared Lamb Blade Steak or Chops with peppered strawberries

4 1inch thick lamb blade steaks or chops
Red Wine
Garlic Cloves, Sliced in halves
1/4 vidalia onion
fresh parsley
rosemary
salt/pepper
smoked salt

Marinate chops/steaks in red wine. Encrust in herbs on both sides-place in fridge for 1 hour or more. About 5 minutes before ready to grill..slice some fresh strawberries-sprinkle freshly ground peppercorns over them. Place some roasted garlic oil in a skillet-heat slightly-place steaks in pan and begin grilling. About 5 min on each side for medium/medium rare. last 3 min on stove place strawberries in side to pick up juices and herbs from the pan. Put steaks on plate with strawberries over the body of the dish.


Roasted white fingerling potatoes with rosemary

Roasted garlic oil
Butter
Rosemary
Salt/Pepper
Minced Garlic
Parmesan Cheese

Slice taters in halves, place in glass baking dish with 2 tbsp of butter/margarine sliced over them, layer seasonings, drizzle evenly with garlic infused olive oil.
Cover with aluminum foil. Place in preheated oven at 350 and cook for about 20 minutes or until potatoes are slightly golden and easy to pierce with a fork. Take out of oven and sprinkle fresh shredded parmesan or italian cheese over the top and garnish with fresh parsley.

Serve with a Spinach salad with blue veined gouda cheese and raspberry pecan vinagrette.
